Chili Lime Sweet Potato Bowls

2 medium sweet potatoes, peeled and cubed

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 lime, zested and juiced

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1/4 cup crumbled feta cheese or queso fresco (optional)

1/2 teaspoon red pepper flakes (optional for extra heat)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Prepare Sweet Potatoes: In a large mixing bowl, combine the cubed sweet potatoes with olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Toss until the sweet potatoes are evenly coated.

      Roast Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until they are tender and lightly caramelized, flipping halfway through for even cooking.
