1 lb (450g) elbow macaroni

1 lb (450g) ground beef (or turkey, if preferred)

1 medium onion, diced

3 cloves garlic, minced

2 cups (500ml) beef broth

1 can (15 oz/425g) kidney beans, drained and rinsed

1 can (15 oz/425g) diced tomatoes (with juices)

2 tablespoons tomato paste

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

2 cups (200g) shredded cheddar cheese (plus more for topping)

1 tablespoon olive oil

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Cook the Macaroni: In a large pot, bring salted water to a boil. Cook the elbow macaroni according to package directions until al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet or pot over medium heat, add olive oil. Once hot, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onions are translucent and fragrant.

      Brown the Meat: Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and fully cooked through, about 6-8 minutes. Drain excess fat if necessary.

        Add Liquids and Seasonings: Stir in the beef broth, diced tomatoes, kidney beans, tomato paste, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Bring the mixture to a slight boil, then reduce the heat to low and simmer for 15 minutes, allowing the flavors to meld.

          Combine with Pasta: Add the cooked macaroni to the chili mixture, stirring until everything is well combined. If the mixture looks too thick, feel free to add a splash more of beef broth.

            Cheesy Goodness: Stir in 2 cups of shredded cheddar cheese until melted and creamy. Taste and adjust seasoning if necessary.
