2 ripe avocados, halved and pitted

2 cups vegetable broth (preferably low-sodium)

1 cup coconut milk (full-fat for creaminess)

2 tablespoons fresh lime juice

1 small cucumber, peeled and chopped

1/4 cup fresh cilantro leaves, plus extra for garnish

1 garlic clove, minced

Salt and pepper to taste

1/2 teaspoon ground cumin (optional for an earthy flavor)

1 small jalapeño, seeded and chopped (optional for a kick)

Cherry tomatoes, halved (for garnish)

Croutons or tortilla chips (for serving)

Instructions
 

Start by preparing your ingredients: Halve and pit the avocados, and scoop the flesh into a blender. Peel and chop the cucumber, and prepare the lime juice, cilantro, and garlic.

    In the blender, combine the avocado flesh, vegetable broth, coconut milk, lime juice, cucumber, cilantro leaves, minced garlic, and if desired, the chopped jalapeño and ground cumin.

      Blend on high speed until the mixture is perfectly smooth and creamy. If the soup is too thick, you can add a bit more vegetable broth to reach your desired consistency.

        Taste the soup and season with salt and pepper according to your preference. Blend again briefly to mix in the seasoning.

          Once blended smoothly, transfer the soup to a bowl or container and cover. Refrigerate for at least 1 hour to allow it to chill thoroughly and the flavors to meld together.
