Ingredients
  

1 cup couscous

1 ¼ cups vegetable broth (or water)

1 cup cherry tomatoes, halved

½ cup cucumber, diced

½ red bell pepper, diced

¼ cup red onion, finely chopped

1 avocado, diced

½ cup fresh basil leaves, chopped

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Crumbled feta cheese (optional, for garnish)

Instructions
 

Prepare the Couscous: In a medium-sized pot, bring the vegetable broth (or water) to a boil. Once boiling, remove the pot from heat and stir in the couscous. Cover and let it sit for 5 minutes, until the couscous has absorbed all the liquid. Fluff with a fork and let it cool.

    Mix the Vegetables: In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, and finely chopped red onion. Toss gently to mix.

      Dress the Salad: In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, salt, and pepper. Pour this dressing over the vegetable mixture and toss until everything is well coated.

        Combine Couscous and Vegetables: Once the couscous has cooled to room temperature, add it to the bowl with the dressed vegetables. Gently fold in the chopped fresh basil and diced avocado. Taste and adjust seasoning if necessary.

          Chill and Serve: Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve cold, topped with crumbled feta cheese if desired.
