Chimichurri Chicken Thighs

4 bone-in, skin-on chicken thighs

Salt and pepper, to taste

1 tablespoon olive oil

1 cup fresh parsley, finely chopped

1/2 cup fresh cilantro, finely chopped

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust for spice preference)

1/2 teaspoon dried oregano

1/2 cup extra virgin olive oil

2 tablespoons red wine vinegar

Juice of 1 lime

Prepare the Chimichurri Sauce: In a medium bowl, combine the chopped parsley, cilantro, minced garlic, red pepper flakes, dried oregano, red wine vinegar, lime juice, and 1/2 cup of extra virgin olive oil. Stir well to combine and season with salt to taste. Allow the sauce to sit at room temperature for at least 20 minutes to let the flavors meld.

    Prepare the Chicken Thighs: While the chimichurri is resting, pat the chicken thighs dry with paper towels. Season both sides with salt and pepper.

      Sear the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil is shimmering, add the chicken thighs, skin-side down. Sear for about 7-8 minutes until the skin is crispy and golden brown. Flip the thighs over and cook for an additional 5 minutes.

        Bake the Chicken: Preheat your oven to 375°F (190°C). After browning the chicken thighs, transfer the skillet to the preheated oven (if your skillet is oven-safe; if not, transfer to a baking dish). Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

          Serve: Once the chicken is cooked, remove it from the oven and let it rest for 5 minutes. Drizzle generously with the chimichurri sauce before serving. Garnish with additional fresh herbs if desired.
