Chipotle Turkey & Avocado Burrito Bake

Ingredients
  

1 pound ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 tablespoon chipotle in adobo sauce, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup cooked brown rice

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup salsa (your favorite variety)

1 cup shredded cheddar cheese

1 ripe avocado, diced

1 cup fresh cilantro, chopped

4 large flour tortillas

½ cup sour cream or Greek yogurt (for serving)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another minute.

      Season the Meat: Add the ground turkey to the skillet. Cook until it’s browned and cooked through, about 5-7 minutes. Drain any excess fat.

        Mix in Spices: Stir in the chipotle in adobo, ground cumin, smoked paprika, salt, and black pepper. Mix well to ensure the spices evenly coat the turkey.

          Combine Ingredients: In a large bowl, combine the cooked turkey mixture, brown rice, black beans, corn, salsa, half of the shredded cheddar cheese, diced avocado, and half of the chopped cilantro. Stir everything together until well-mixed.

            Prepare the Tortillas: Lay each tortilla flat on a clean surface. Spoon a generous amount of the meat mixture onto the center of each tortilla, then wrap them tightly like burritos.

              Assemble the Bake: Place the wrapped burritos seam-side down in a greased 9x13-inch baking dish. If there are any remaining filling ingredients, feel free to pour them over the top of the burritos.

                Add Cheese: Sprinkle the remaining shredded cheddar cheese over the top of the assembled burritos.

                  Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                    Garnish: Once out of the oven, let it cool for a few minutes. Garnish with the remaining chopped cilantro before serving.

                      Enjoy!: Serve with a dollop of sour cream or Greek yogurt on the side for a creamy finish.
