1 cup ripe bananas, mashed (about 2-3 medium bananas)

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup almond milk (or any milk of your choice)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

2 large eggs

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup whole wheat flour (or almond flour for a gluten-free option)

1/2 cup protein powder (chocolate or vanilla flavor)

1/4 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional, for extra decadence)

Optional toppings: chopped walnuts or additional dark chocolate chips

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix wet ingredients: In a large mixing bowl, combine the mashed bananas, Greek yogurt, almond milk, honey (or maple syrup), eggs, and vanilla extract. Whisk together until well combined and smooth.

      Combine dry ingredients: In a separate bowl, whisk together the rolled oats, whole wheat flour, protein powder, cocoa powder, baking soda, baking powder, and salt.

        Combine mixtures: Slowly add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix! If using, fold in the dark chocolate chips and any optional toppings.

          Fill the muffin tins: Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean (a few moist crumbs are okay!).
