For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

16 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

½ cup mini chocolate chips

For the Topping:

½ cup mini chocolate chips (for sprinkling on top)

Preheat the oven: Preheat your oven to 325°F (160°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and vanilla extract. Mix until well combined. Press the mixture evenly into the bottom of the prepared baking pan to create a firm crust layer. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove and let cool slightly.

      Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes. Gradually add in the granulated sugar and mix until well combined.

        Add eggs and sour cream: Add the eggs, one at a time, mixing just until incorporated. Avoid overmixing. Then, stir in the sour cream and vanilla extract until the mixture is smooth.

          Fold in the chocolate chips: Gently fold in ½ cup of mini chocolate chips into the cheesecake batter.

            Assemble the bars: Pour the cheesecake filling over the prepared crust and spread it out evenly. Sprinkle the remaining ½ cup of mini chocolate chips on top.

              Bake: Place the pan in the oven and bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly. The filling will firm up as it chills.

                Cool and chill: Remove from the oven and allow to cool in the pan at room temperature for about 1 hour. Afterward, transfer to the fridge and chill for at least 4 hours, or overnight for best results.

                  Serve: Once chilled, lift the cheesecake bars out of the pan using the parchment overhang. Cut into squares or rectangles. Optional: Serve with a dollop of whipped cream on top for added indulgence.
