Chocolate Chip Zucchini Muffins

1 medium zucchini (about 1 cup grated)

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/4 cup unsweetened cocoa powder

1/2 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1/2 cup vegetable oil (or melted coconut oil)

1 tsp vanilla extract

1/2 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin pan with paper liners or grease it lightly.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. If the zucchini is very watery, squeeze out some of the moisture with a clean kitchen towel or paper towel.

      Mix Dry Ingredients: In a mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and cocoa powder until well combined.

        Mix Wet Ingredients: In another large bowl, whisk the granulated sugar, brown sugar, and eggs together until creamy. Add the vegetable oil and vanilla extract, whisking until fully incorporated.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, gently folding them together with a spatula. Do not overmix.

            Add Zucchini and Chocolate Chips: Fold in the grated zucchini and chocolate chips (and nuts if using) until evenly distributed.
