3 large ripe kiwis, peeled and sliced into 1/2-inch rounds

1 cup semi-sweet chocolate chips

2 tablespoons coconut oil (or any neutral oil)

1/4 cup crushed nuts (such as almonds or walnuts) for topping

1/4 cup shredded coconut (unsweetened) for topping

Prepare the Kiwi: On a clean surface, arrange kiwi slices in a single layer. If using wooden popsicle sticks, insert them into the bottom of each kiwi round for easy handling later.

    Melt the Chocolate: In a microwave-safe bowl, add the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

      Dip the Kiwi: Holding each kiwi slice by the stick, dip it into the melted chocolate, ensuring it’s completely coated. Gently tap off any excess chocolate.

        Add the Toppings: While the chocolate is still wet, sprinkle crushed nuts and shredded coconut on top of the coated kiwi to add extra crunch and flavor.

          Cool and Set: Place the chocolate-covered kiwis on a parchment-lined baking sheet. Repeat the dipping and coating process until all kiwi slices are done.

            Chill: Transfer the baking sheet to the refrigerator for about 30-45 minutes, or until the chocolate coating is set and firm.

              Serve: Once set, remove from the refrigerator. Serve immediately or store in an airtight container in the fridge for up to 2 days.
