2 cups unsweetened shredded coconut

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1/4 teaspoon salt

8 oz dark chocolate (70% cocoa or higher)

1 tablespoon coconut oil (optional, for smoothing the chocolate)

Sea salt (for garnish, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Coconut Mixture: In a mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Stir until the mixture is thoroughly combined.

      Form the Clusters: Line a baking sheet with parchment paper. Using your hands or a small ice cream scoop, form rounded clusters (about 1 tablespoon each) of the coconut mixture and place them on the prepared baking sheet, spaced about 1 inch apart.

        Bake the Clusters: Bake in the preheated oven for about 15-20 minutes, or until the clusters are golden brown. Keep an eye on them to prevent burning. Once baked, remove them from the oven and let them cool completely on the baking sheet.

          Melt the Chocolate: While the clusters cool, melt the dark chocolate. Place the chocolate in a microwave-safe bowl, add the coconut oil (if using), and microwave in 30-second intervals, stirring in between, until fully melted and smooth. Alternatively, you can use a double boiler for melting the chocolate.

            Dip the Clusters: Once the coconut clusters are cooled, dip the bottoms into the melted chocolate, allowing excess chocolate to drip off. You can also drizzle the chocolate over the tops if you prefer.

              Set the Chocolate: Place the chocolate-dipped clusters back on the parchment paper. If desired, sprinkle a pinch of sea salt on top before the chocolate sets.
