2 cups all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk (or 1 cup milk with 1 tablespoon vinegar/lemon juice)

1/2 cup unsalted butter, melted (plus extra for greasing)

2 large eggs

1 teaspoon vanilla extract

For the Cinnamon Swirl Filling:

1/3 cup brown sugar, packed

1 tablespoon ground cinnamon

2 tablespoons unsalted butter, softened

For the Cream Cheese Glaze (optional):

4 oz cream cheese, softened

1 cup powdered sugar

1-2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease or line a muffin tin with paper liners.

    Prepare the Muffin Batter:

      - In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

        - In another bowl, mix the buttermilk, melted butter, eggs, and vanilla extract until well combined.

          - Pour the wet ingredients into the dry ingredients and gently stir until just combined, being careful not to overmix.

            Make the Cinnamon Swirl Filling:

              - In a small bowl, mix together the brown sugar, ground cinnamon, and softened butter until you have a crumbly mixture.

                Assemble the Muffins:

                  - Fill each muffin cup about 1/3 full with the muffin batter.

                    - Sprinkle a generous tablespoon of the cinnamon swirl filling over the batter in each cup.

                      - Top with additional muffin batter until the cups are about 2/3 full. Use a knife or toothpick to gently swirl the filling into the batter.

                        Bake:

                          - Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean (a few crumbs are okay, but not wet batter).

                            - Remove from the oven and allow to cool in the pan for about 5 minutes before transferring them to a wire rack to cool entirely.

                              Prepare the Cream Cheese Glaze (optional):

                                - In a medium bowl, combine the softened cream cheese, powdered sugar, milk, and vanilla extract. Whisk until smooth and drizzleable.

                                  - If the glaze is too thick, add a bit more milk until you reach your desired consistency.

                                    Serve:

                                      - Drizzle the cream cheese glaze over the cooled muffins if desired, and enjoy your Swirly Cinnamon Bliss Muffins warm or at room temperature!
