1 can (8 oz) refrigerated cinnamon rolls (with icing)

2 tablespoons cream cheese, softened

1 teaspoon vanilla extract

1 teaspoon ground cinnamon (optional)

For the French Toast:

4 large eggs

1 cup whole milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

8 slices of thick bread (brioche or Texas toast works best)

Butter, for cooking

For the Topping:

Maple syrup

Powdered sugar, for dusting

Fresh berries (optional)

Instructions
 

Prepare the Cinnamon Roll Filling:

    - Open the can of cinnamon rolls and remove the icing packet (set aside for later).

      - In a small bowl, combine the softened cream cheese, vanilla extract, and ground cinnamon. Mix until smooth.

        Stuff the Rolls:

          - Take each cinnamon roll and carefully flatten it with your fingers or a rolling pin to create a larger circle.

            - Place a dollop of the cream cheese mixture in the center of each flattened roll.

              - Roll the cinnamon roll back up tightly and set aside.

                Make the French Toast Mixture:

                  - In a large bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

                    Assemble the French Toast:

                      - Preheat a skillet or griddle over medium heat and add a pat of butter.

                        - Dip each slice of bread into the egg mixture, making sure to coat both sides thoroughly.

                          - Add a stuffed cinnamon roll to the center of half of the slices of dipped bread, then place another slice of bread on top, pressing gently to seal.

                            Cook the French Toast:

                              - Place the stuffed sandwiches on the skillet or griddle and cook for about 3-4 minutes on each side, or until golden brown and cooked through. You may need to adjust the heat to ensure they cook evenly without burning.
