Cinnamon Sugar Pretzel Bites

1 cup warm water (110°F to 115°F)

1 packet (2 1/4 teaspoons) active dry yeast

1/4 cup granulated sugar

4 cups all-purpose flour

1 teaspoon kosher salt

1/2 cup baking soda

1 large egg (beaten, for egg wash)

1/2 cup unsalted butter (melted)

1/2 cup granulated sugar (for coating)

2 teaspoons ground cinnamon (for coating)

Prepare the Yeast Mixture: In a large mixing bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.

    Mix the Dough: Add 1/4 cup of granulated sugar and kosher salt to the yeast mixture, then add the flour gradually, mixing until a dough starts to form. Knead on a floured surface for about 5 minutes until smooth and elastic.

      First Rise: Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

        Preheat Oven: Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper.

          Shape the Pretzel Bites: Once the dough has risen, punch it down and divide it into small sections (about 1-inch each). Roll each piece into a rope and then cut it into bite-sized pieces.

            Boil the Bites: In a large pot, bring 8 cups of water to a boil and add 1/2 cup of baking soda. Carefully add the pretzel bites to the boiling water in batches, boiling for about 30 seconds each. Remove with a slotted spoon and place on the prepared baking sheets.

              Egg Wash: Brush the tops of the pretzel bites with the beaten egg to give them a nice golden color when baked.

                Bake: Bake in the preheated oven for about 12-15 minutes, or until golden brown.
