1 lb (450g) ground lamb (or beef for variation)

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup frozen peas

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 cup beef or lamb broth

Salt and pepper to taste

4 cups mashed potatoes (about 2 lbs/900g of potatoes)

1/2 cup grated cheddar cheese (optional)

2 tablespoons olive oil or butter (for cooking)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Cook the Meat: In a large skillet, heat the olive oil or butter over medium heat. Add the chopped onion and garlic, sautéing until they become translucent.

      Add Vegetables: Stir in the diced carrots and continue to cook for another 5 minutes until they start to soften.

        Brown the Meat: Increase the heat to medium-high and add the ground lamb. Cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.

          Season and Simmer: Mix in the tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and season with salt and pepper. Pour in the broth and bring to a simmer. Allow it to cook for about 10 minutes until the mixture thickens slightly, then stir in the peas.

            Prepare the Mashed Potatoes: If you haven’t already, prepare your mashed potatoes by boiling the peeled and chopped potatoes until tender. Drain and mash them, mixing in salt, pepper, and a splash of milk or cream for creaminess.

              Assemble the Pie: In a greased baking dish, spread the meat and vegetable mixture evenly across the bottom. Top with the creamy mashed potatoes, smoothing them out with a spatula. For an optional touch, sprinkle the grated cheddar cheese on top for a cheesy crust.
