8 oz egg noodles

1 can (12 oz) tuna, drained and flaked

1 can (10.5 oz) cream of mushroom soup

1 cup milk

1 cup frozen peas (or fresh if preferred)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese (plus extra for topping)

1 cup crushed potato chips or breadcrumbs

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

2 tbsp olive oil or butter

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 2-quart casserole dish.

    Cook Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

      Sauté Aromatics: In a skillet over medium heat, add olive oil or butter. Once melted, add the chopped onion and sauté until softened, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant.

        Prepare Sauce Mixture: In a large mixing bowl, combine the cream of mushroom soup, milk, thyme, paprika, salt, and pepper. Mix well until smooth.

          Combine Ingredients: To the bowl with the sauce mixture, stir in the cooked noodles, flaked tuna, sautéed onions and garlic, frozen peas, and 1 cup of shredded cheddar cheese. Mix until everything is evenly coated.

            Transfer to Dish: Pour the noodle mixture into the prepared casserole dish, spreading it evenly.

              Add Crunch Topping: In a small bowl, combine crushed potato chips or breadcrumbs with a little extra cheese. Sprinkle this topping over the casserole for a crunchy finish.
