1 cup graham cracker crumbs

1/4 cup unsweetened shredded coconut

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

2 (8 oz) packages cream cheese, softened

1/2 cup granulated sugar

1/4 cup sour cream

1/4 cup coconut cream (canned coconut milk, refrigerated and only the cream)

2 large eggs

1 tsp vanilla extract

1/2 cup unsweetened shredded coconut (for added texture)

For the Topping:

1 cup whipped cream

1/4 cup toasted coconut flakes

Fresh mint leaves for garnish (optional)

Preheat the Oven:

    Preheat your oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy lifting later.

      Make the Crust:
