Made from refreshing seedless watermelon and hydrating coconut water, these pops are a guilt-free treat packed with vitamins and electrolytes. Easy to make and perfect for garden parties or casual afternoons, they combine the sweetness of watermelon with a zesty hint of lime. Ingredients
  

4 cups seedless watermelon, cubed

1 cup coconut water

2 tablespoons fresh lime juice

2 tablespoons honey or agave syrup (optional, adjust for sweetness)

1/4 teaspoon sea salt

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Watermelon: In a blender, add the cubed watermelon and blend until smooth. If you prefer a chunkier texture, blend in pulses to retain some watermelon texture.

    Mix Ingredients: In a mixing bowl, combine the watermelon puree, coconut water, lime juice, honey or agave syrup, and sea salt. Mix well until all ingredients are fully incorporated. Taste and adjust sweetness if necessary.

      Fill the Molds: Pour the mixture evenly into popsicle molds, filling each mold about 3/4 full. If desired, drop a few fresh mint leaves into each mold for an added flavor dimension.

        Insert Sticks: If your molds have a built-in lid with sticks, secure them. If not, place popsicle sticks into the center of each mold, ensuring they stand straight.

          Freeze: Place the molds in the freezer for at least 4-6 hours or until fully frozen. For best results, leave them overnight.

            Unmold and Serve: To release the pops from the molds, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the popsicles.

              Garnish (optional): Serve the Coconut Watermelon Pops on a plate and garnish with additional mint leaves if desired. Enjoy this refreshing treat on a hot day!
