Cold Caprese Salad Skewers

1 pint cherry tomatoes

8 oz fresh mozzarella balls (bocconcini)

1 cup fresh basil leaves

2 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

Salt, to taste

Black pepper, to taste

12-16 wooden skewers (6 inches long)

Instructions
 

Prep Ingredients: Start by rinsing the cherry tomatoes and basil leaves under cold water. Pat them dry with a paper towel. If the mozzarella balls are packed in water, drain them and let them sit on a paper towel for a few minutes to remove excess moisture.

    Assemble Skewers: On each skewer, thread a cherry tomato, followed by a basil leaf (folded if large), then a mozzarella ball. Repeat this pattern on the skewer until you reach the end. You can typically fit 2-3 sets of tomato-basil-mozzarella, depending on the size of your skewers.

      Season the Skewers: Once all your skewers are assembled, placed them on a serving platter. Drizzle extra virgin olive oil over the skewers evenly, then drizzle balsamic glaze over them for a touch of sweetness. Sprinkle salt and freshly cracked black pepper to taste.

        Chill and Serve: Cover the platter with plastic wrap and refrigerate the skewers for at least 30 minutes. This will allow the flavors to meld and the salad to chill.

          Final Presentation: Before serving, give the skewers one last light drizzle of olive oil and balsamic glaze for an appealing finish.
