Cold Chicken & Zoodle Salad

Ingredients
  

2 cups grilled chicken breast, shredded or diced

2 medium zucchinis, spiralized into noodles (zoodles)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1/2 cup feta cheese, crumbled

1/4 cup olives (black or green), pitted and sliced

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions
 

Prepare the Chicken: If you haven’t already, grill or bake chicken breasts until fully cooked. Let them cool and then shred or dice into bite-sized pieces.

    Spiralize the Zucchini: Using a spiralizer, turn the zucchinis into zoodles. If you don't have a spiralizer, you can use a vegetable peeler to create long strips, or buy pre-spiralized zucchini.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined. Adjust seasoning as necessary.

        Combine Salad Ingredients: In a large mixing bowl, combine the grilled chicken, zoodles, cherry tomatoes, cucumber, red onion, basil, parsley, feta cheese, and olives.

          Toss with Dressing: Pour the dressing over the salad and toss gently until all ingredients are well coated.
