Cold Lentil & Veggie Salad

Ingredients
  

1 cup green or brown lentils, rinsed

2 cups water

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1 bell pepper (red, yellow, or orange), diced

1 cup corn (fresh or frozen)

1 small red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 clove garlic, minced

Salt and pepper to taste

Instructions
 

Cook the Lentils: In a medium saucepan, combine the rinsed lentils and water. Bring to a boil, reduce heat, and simmer uncovered for about 20-25 minutes, or until lentils are tender but not mushy. Drain and rinse under cold water to cool.

    Prepare the Veggies: While the lentils are cooking, wash and dice the cucumber, bell pepper, and cherry tomatoes. Finely chop the red onion and parsley.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper. Adjust seasoning to taste.

        Combine Ingredients: In a large mixing bowl, add the cooled lentils, diced cucumber, bell pepper, cherry tomatoes, corn, red onion, and parsley. Gently toss to combine.

          Add Feta (if using): If you prefer a creamy touch, sprinkle the crumbled feta cheese over the top and give it one last gentle toss.

            Dress & Serve: Pour the dressing over the salad and mix until everything is evenly coated. Let the salad sit for 15-20 minutes at room temperature for the flavors to meld, or refrigerate until ready to serve.

              Garnish & Enjoy: Serve chilled or at room temperature, garnished with additional parsley and a few extra feta crumbles if desired.
