Cold Pasta Salad

8 oz (about 225g) of rotini or fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and rinse it under cold water to stop the cooking process. Set aside.

    Prepare the Veggies: While the pasta cools, prepare the cherry tomatoes, cucumber, red onion, and olives. Combine them in a large mixing bowl.

      Mix the Dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

        Combine: Once the pasta has cooled, add it to the bowl with the vegetables. Pour the dressing over the pasta and veggies, then toss gently to ensure everything is coated well.

          Add the Feta and Parsley: Finally, fold in the crumbled feta cheese and chopped parsley. Give it one last gentle toss to mix everything together.

            Chill: Cover the pasta salad with plastic wrap or transfer it to an airtight container. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

              Serve: Toss the salad gently again before serving. Enjoy it chilled or at room temperature!
