8 oz rotini or penne pasta

1 lb cooked chicken breast, diced

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 medium red bell pepper, diced

1 cup cherry tomatoes, halved

1/2 small red onion, finely chopped

1 avocado, diced (for garnish)

1/4 cup fresh cilantro, chopped

1/2 cup diced jalapeños (optional for extra heat)

For the dressing:

1/3 cup olive oil

1/4 cup lime juice (freshly squeezed)

1 tsp ground cumin

1 tsp chili powder

1 tsp garlic powder

Salt and pepper, to taste

Cook the Pasta: In a large pot of boiling salted water, cook the rotini or penne according to package instructions until al dente. Drain the pasta and rinse under cold water to stop cooking. Set aside in a large mixing bowl.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, ground cumin, chili powder, garlic powder, salt, and pepper until well combined. Adjust seasoning as needed, tasting for balance.

      Combine Ingredients: To the bowl with cooked pasta, add the diced chicken, corn, black beans, red bell pepper, cherry tomatoes, red onion, and jalapeños if using. Toss gently to combine all ingredients evenly.
