Ingredients

2 cups cooked chicken breast, shredded or diced

1 cup plain Greek yogurt

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup celery, diced

1/2 cup red onion, finely chopped

1 cup cucumber, diced (remove seeds if desired)

1/2 cup bell pepper, diced (any color)

Salt and pepper to taste

Optional: 1/4 cup walnuts or almonds, chopped (for crunch)

Instructions

Prepare the Chicken: If you haven't already, cook your chicken breast by boiling, baking, or grilling until fully cooked. Allow it to cool, then shred or dice it into bite-sized pieces.

Mix the Dressing: In a large mixing bowl, add the Greek yogurt, fresh dill, lemon juice, garlic powder, onion powder, salt, and pepper. Whisk together until smooth and well combined.

Add Vegetables: To the bowl with the dressing, add the diced celery, red onion, cucumber, and bell pepper. Stir to combine.

Combine with Chicken: Add the shredded or diced chicken to the yogurt mixture. Gently fold everything together until the chicken is evenly coated with the dressing.

Adjust Seasoning: Taste the salad, and adjust salt and pepper as needed. If you’re using nuts for added texture, fold them in gently at this point.

Chill: Cover the bowl with plastic wrap or transfer the chicken salad to an airtight container. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Serve: Serve the cold yogurt dill chicken salad on a bed of mixed greens, as a sandwich filling, or with whole-grain crackers. Enjoy your refreshing dish!
