2 cups cottage cheese

6 large eggs

1 cup shredded cheddar cheese

1 cup chopped spinach (fresh or frozen, thawed)

1/2 cup diced bell pepper (red or green)

1/2 cup diced onion

1/2 cup cherry tomatoes, halved

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1 teaspoon olive oil (for greasing the baking dish)

Fresh parsley or chives for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a baking dish (approximately 9x13 inches) by lightly greasing it with olive oil.

    Prepare the Veggies: If using fresh spinach, wash and chop it. In a skillet over medium heat, sauté the diced onion and bell pepper until they become soft (about 3-4 minutes). If you’re using frozen spinach, make sure it's thoroughly thawed and drained of excess moisture.

      Mix the Ingredients: In a large mixing bowl, combine the cottage cheese, eggs, and shredded cheddar cheese. Whisk until the mixture is smooth. Then, stir in the chopped spinach, sautéed onions, bell peppers, halved cherry tomatoes, garlic powder, onion powder, salt, black pepper, and oregano until well combined.

        Pour Into Baking Dish: Pour the mixture into the greased baking dish, spreading it evenly with a spatula to ensure it cooks uniformly.

          Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the edges are golden brown and the center is slightly puffed and set.
