2 cups cottage cheese (large curd)

4 large eggs

1 cup shredded sharp cheddar cheese

1 cup spinach, chopped (fresh or frozen)

½ cup diced bell pepper (any color)

½ cup diced onions

1 clove garlic, minced

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon paprika

¼ teaspoon onion powder

1 tablespoon olive oil

¼ cup grated Parmesan cheese (for topping)

Fresh herbs (like parsley or chives) for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a medium skillet over medium heat, add olive oil. Once hot, add the diced onions, bell peppers, and minced garlic. Sauté for about 5 minutes or until the vegetables are softened and the onions are translucent. If using frozen spinach, add it now and cook until it is fully thawed and moisture evaporates. Remove from heat.

      Mix Egg Base: In a large mixing bowl, whisk together the eggs, cottage cheese, and seasonings (salt, pepper, paprika, onion powder) until well combined.

        Combine Ingredients: Stir in the sautéed vegetable mixture and shredded cheddar cheese into the egg-cottage mixture, ensuring everything is evenly distributed.

          Prepare Baking Dish: Grease a 9x9 inch baking dish or use a similar-sized casserole dish. Pour the egg and cheese mixture into the dish, spreading it evenly.
