1 cup cottage cheese

4 large eggs

1/2 cup shredded cheddar cheese

1/4 cup finely chopped spinach (fresh or frozen)

1/4 cup diced bell peppers (red or green)

2 tablespoons chopped fresh chives (or 1 tablespoon dried)

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: pinch of red pepper flakes for heat

Cooking spray or oil for greasing the muffin tin

Preheat Oven: Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by greasing it lightly with cooking spray or oil to prevent sticking.

    Mix the Base: In a large mixing bowl, combine the cottage cheese and eggs. Use a whisk to blend them together until the mixture is smooth and slightly frothy.

      Add the Cheeses and Veggies: Stir in the shredded cheddar cheese, chopped spinach, diced bell peppers, and fresh chives. Ensure everything is evenly mixed throughout the egg and cottage cheese base.

        Season: Add in the garlic powder, salt, black pepper, and if desired, a pinch of red pepper flakes for an extra kick. Mix well to ensure all flavors are combined.

          Pour into Muffin Tin: Evenly pour the mixture into the prepared muffin tin, filling each cup about 3/4 full to allow room for rising.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the bites are set and lightly golden on top. You can check their doneness by inserting a toothpick—if it comes out clean, they’re ready!
