1 cup cottage cheese

4 large eggs

1/2 cup bell pepper, finely chopped (any color)

1/4 cup green onions, chopped

1/2 teaspoon garlic powder

1/4 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup shredded cheese (cheddar or your choice)

Optional: fresh herbs (parsley, chives, or spinach) for added flavor

Cooking spray or olive oil for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by spraying it with cooking spray or lightly greasing it with olive oil.

    Mix the Egg Base: In a large mixing bowl, combine the cottage cheese and eggs. Whisk together until well blended; it’s fine if some cottage cheese clumps remain.

      Add Seasonings: Stir in the garlic powder, paprika, salt, and black pepper into the egg mixture. Mix until everything is evenly combined.

        Incorporate Vegetables: Gently fold in the chopped bell pepper, green onions, and optional fresh herbs, ensuring everything is evenly distributed throughout the mixture.

          Pour into Muffin Tin: Evenly pour the mixture into each muffin cup of the prepared tin, filling each cup about 3/4 full.

            Add Cheese Topping: Sprinkle the shredded cheese on top of each filled muffin cup for a delicious cheesy crust.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the egg bites are set and slightly golden on top. A toothpick inserted into the center should come out clean.

                Cool and Remove: Once done, remove the tin from the oven and allow the bites to cool for a few minutes. Use a spatula to gently remove the egg bites from the muffin tin.
