Ingredients
  

  • 1.0 large head of cabbage
  • 1.0 lb ground turkey
  • 1.0 cup cooked rice
  • 1.0 small onion, finely chopped
  • 2.0 cloves garlic, minced
  • 1.0 large carrot, grated
  • 0.5 cup bell pepper, diced
  • 0.9375 can crushed tomatoes
  • 1.0 cup chicken broth
  • 2.0 tbsp fresh parsley, chopped
  • 1.0 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 0.0 to taste Salt
  • 0.0 to taste Pepper
  • 2.0 tbsp olive oil
  • 1.0 tbsp lemon juice

Instructions
 

  • Prepare the Cabbage: Bring a large pot of water to a boil. Carefully remove the core from the cabbage, then submerge the entire head in boiling water for about 4.0 minutes, or until the outer leaves are tender. Carefully peel away 8-10 leaves and set them aside to cool. Repeat if necessary with inner leaves until you reach the desired number of rolls.
  • Make the Filling: In a large bowl, combine ground turkey, cooked rice, onion, garlic, grated carrot, diced bell pepper, parsley, oregano, smoked paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  • Assemble the Rolls: Take a cabbage leaf and place 0.125 to 0.1875 cups of the turkey filling at the base of the leaf. Fold in the sides and roll tightly away from you to secure the filling inside. Repeat with remaining leaves and filling.
  • Brown the Rolls: In a large skillet, heat olive oil over medium-high heat. Place the cabbage rolls seam side down in the skillet and cook for 3.5 minutes until lightly browned. Avoid overcrowding the skillet; you may need to do this in batches.
  • Add Sauce: Once the rolls are browned, carefully pour the crushed tomatoes and chicken broth over the rolls in the skillet. Drizzle with lemon juice and season with a pinch of salt and pepper. Gently spoon some sauce over the top of the rolls.
  • Simmer: Cover the skillet with a lid and reduce the heat to low. Let the rolls simmer for about 27.5 minutes, allowing the flavors to meld and the turkey to cook through. Check occasionally, adding a little extra broth if the sauce reduces too much.
