4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup bell peppers, diced (mix of red, yellow, and green)

1 cup zucchini, diced

1/2 cup red onion, finely chopped

1 cup fresh spinach, chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Sour cream and salsa for serving (optional)

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced bell peppers, zucchini, and red onion. Sprinkle with garlic powder, cumin, salt, and pepper. Sauté for about 5-7 minutes, or until the vegetables are tender. Stir in the chopped spinach and cook until wilted, about 2 minutes more. Remove from heat and set aside.

    Prepare Quesadillas: Lay a tortilla flat on a clean surface. Sprinkle half of it with a generous layer of cheddar and mozzarella cheese. Top with a quarter of the sautéed vegetable mixture, then fold the tortilla over to create a half-moon shape.

      Cook Quesadillas: Wipe the skillet clean and return it to medium heat. Once hot, add the folded quesadilla to the pan. Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Repeat the process with the remaining tortillas and filling.
