Ingredients

4 boneless, skinless chicken breasts

1 cup Granny Smith apples, peeled, cored, and diced

1/2 cup cream cheese, softened

1/3 cup crumbled goat cheese

1/4 cup fresh sage leaves, finely chopped

2 cloves garlic, minced

1/2 cup chopped walnuts (optional)

1 tablespoon olive oil

Salt and pepper to taste

1 cup chicken broth

1 tablespoon honey (optional, for a touch of sweetness)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Filling: In a medium bowl, combine the diced apples, cream cheese, goat cheese, chopped sage, minced garlic, and walnuts (if using). Mix well until all ingredients are fully incorporated. Season with a pinch of salt and pepper, and drizzle with honey if you prefer a slight sweetness.

Prepare the Chicken: Using a sharp knife, create a pocket in each chicken breast by slicing it horizontally, being careful not to cut all the way through.

Stuff the Chicken: Generously stuff each chicken breast pocket with the creamy apple sage filling, ensuring it's evenly distributed. Use toothpicks to secure the opened edges if needed.

Sear the Chicken: In an oven-safe skillet, heat the olive oil over medium heat. Add the stuffed chicken breasts and sear each side for about 4–5 minutes, or until golden brown. Do not overcrowd the pan; sear in batches if necessary.

Add Chicken Broth: After searing, carefully add the chicken broth to the skillet, making sure not to pour it over the chicken. This will keep the chicken moist while baking.

Bake: Transfer the skillet to the preheated oven and bake for 20–25 minutes, until the chicken is cooked through (internal temperature of 165°F or 74°C).

Serve: Once done, remove from the oven and let the chicken rest for a few minutes. Serve warm, drizzled with a bit of the pan sauce for extra flavor.

Garnish (optional): Sprinkle with additional fresh sage leaves or chopped walnuts for a beautiful presentation.
