Creamy Avocado Pasta Salad

8 oz (225g) pasta (such as penne or fusilli)

2 ripe avocados, peeled and pitted

1/4 cup Greek yogurt

2 tablespoons olive oil

1 tablespoon lemon juice

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/4 cup fresh basil leaves, chopped

1/4 cup feta cheese, crumbled (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Avocado Dressing: In a blender or food processor, combine the ripe avocados, Greek yogurt, olive oil, lemon juice, minced garlic, red pepper flakes, salt, and black pepper. Blend until creamy and smooth. Taste and adjust seasoning if necessary.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta with halved cherry tomatoes, diced cucumber, chopped red onion, and fresh basil leaves.

        Add Dressing: Pour the creamy avocado dressing over the pasta and vegetable mixture. Toss gently until everything is well coated and evenly mixed.

          Add Feta: If desired, sprinkle crumbled feta cheese on top and gently fold it into the salad.
