1 lb (450g) store-bought or homemade potato gnocchi

2 cups cherry tomatoes, halved

3 tablespoons olive oil

Salt and pepper, to taste

2 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 cup fresh basil leaves, roughly chopped

1 teaspoon lemon zest

1 tablespoon lemon juice

Optional: Red pepper flakes for a kick

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes: On a baking sheet, toss the halved cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out in a single layer and roast in the preheated oven for about 20-25 minutes, or until they begin to blister and caramelize.

      Cook the Gnocchi: In a large pot of boiling salted water, add the gnocchi. Cook according to package instructions or until they float to the surface, indicating they’re done (about 2-3 minutes). Drain and set aside.

        Make the Creamy Sauce: In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream, stirring constantly.

          Add Parmesan Cheese: Gradually whisk in the grated Parmesan cheese until melted and creamy. Adjust heat to low to prevent boiling.

            Combine Ingredients: Add the cooked gnocchi, roasted tomatoes, chopped basil, lemon zest, and lemon juice to the skillet with the sauce. Gently mix until everything is evenly coated. If desired, sprinkle with red pepper flakes for a hint of heat.

              Serve: Remove from heat and serve immediately, garnished with extra basil and more Parmesan cheese if desired.
