Creamy Cajun Pasta with Turkey

8 oz fettuccine or penne pasta

1 lb ground turkey

2 tbsp olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or yellow), chopped

1 tbsp Cajun seasoning (adjust to taste)

1 tsp smoked paprika

½ tsp cayenne pepper (optional, for extra heat)

1 can (14 oz) diced tomatoes, drained

1 cup heavy cream

½ cup grated Parmesan cheese

1 cup spinach leaves (fresh or frozen)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Brown the Turkey: In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spoon. Season lightly with salt and pepper, then remove the turkey from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
