Next, add in the cherry tomatoes, which should be halved to create bite-sized pieces that burst with flavor. If you’ve opted for fresh mozzarella balls, also known as bocconcini, add those whole. Otherwise, if you are using larger mozzarella, cut them into small cubes. The goal here is to create a visually appealing salad with contrasting colors and textures.

Creamy Caprese Pasta Salad

8 oz fusilli or rotini pasta

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls or diced mozzarella

1 cup fresh basil leaves, roughly chopped

1 cup spinach leaves, chopped (optional for extra greens)

1/2 cup creamy dressing (store-bought or homemade, see below)

2 tbsp balsamic vinegar

2 tbsp olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Optional: 1/4 cup pine nuts, toasted

Creamy Dressing (optional homemade):

1/2 cup Greek yogurt

1/4 cup mayonnaise

1 tbsp Dijon mustard

1 tbsp lemon juice

Salt and pepper, to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli or rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool down. Set aside.

    Prepare the Dressing (if making homemade): In a medium bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth and creamy. Adjust seasoning as needed.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella, chopped basil, and chopped spinach if using.

        Dress the Salad: Pour the creamy dressing over the pasta mixture, add the balsamic vinegar and olive oil, then gently toss until everything is evenly coated. Add salt and pepper to taste.

          Chill and Serve: Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld.

            Garnish: Before serving, sprinkle with toasted pine nuts (if using) and fresh basil leaves for a pop of color.
