1 large head of cauliflower, cut into florets

1 cup whole milk

1 cup heavy cream

2 cups sharp cheddar cheese, grated

1/2 cup Parmesan cheese, grated

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1/4 teaspoon nutmeg (optional)

1/2 cup breadcrumbs

2 tablespoons fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Cauliflower: In a large pot, bring water to a boil and add a pinch of salt. Add the cauliflower florets and blanch for about 3-4 minutes until slightly tender. Drain and set aside.

      Prepare the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes, stirring constantly, to create a roux. Gradually whisk in the milk and heavy cream, ensuring there are no lumps.
