1 cup diced smoked sausage (like kielbasa or andouille)

1 cup diced cooked ham

1 cup shredded rotisserie chicken

1 cup assorted charcuterie (such as salami, prosciutto, and pepperoni), sliced thin

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Crusty bread or crackers (for serving)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are softened and the onion is translucent.

        Add Broth & Simmer: Pour in the chicken or vegetable broth. Bring the mixture to a gentle boil. Reduce the heat to low and let it simmer for about 15 minutes, allowing the flavors to meld.
