Ingredients

1 large head of cauliflower, cut into florets

1 cup sharp cheddar cheese, shredded

½ cup cream cheese, softened

¼ cup unsalted butter

½ cup milk (or more for desired creaminess)

2 cloves garlic, minced

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions

Prepare the Cauliflower:

    - Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until tender. Drain well and set aside.

      Sauté the Garlic:

        - In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, just until fragrant. Avoid browning.

          Mash the Cauliflower:

            - In a large mixing bowl, combine the drained cauliflower, sautéed garlic, cream cheese, milk, and a pinch of salt and pepper. Using a potato masher or a hand mixer, mash the ingredients together until smooth and creamy.

              Add the Cheddar:

                - Fold in the shredded cheddar cheese and continue mixing until the cheese is melted and fully incorporated into the mash. Adjust the consistency with more milk if needed, and season to taste with additional salt and pepper.

                  Serve:

                    - Transfer the creamy cheddar cauliflower mash to a serving bowl. Garnish with freshly chopped chives or parsley for a burst of flavor and color. Serve warm and enjoy!
