Creamy Chicken and Spinach Pasta Bake

300g penne pasta

400g cooked chicken breast, shredded

200g fresh spinach, roughly chopped

1 cup (240ml) heavy cream

1 cup (240ml) chicken broth

1 cup (100g) grated mozzarella cheese

½ cup (50g) grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons olive oil

1 teaspoon Italian seasoning

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook for 8-10 minutes, or until al dente. Drain and set aside.

      Sauté Spinach: In a large skillet, heat olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes until wilted. Remove from heat and set aside.

        Make the Sauce: In the same skillet, combine the heavy cream, chicken broth, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir well and allow it to simmer over low heat for 5 minutes until slightly thickened.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, shredded chicken, sautéed spinach, and the cream sauce. Mix until everything is evenly coated.

            Layer the Bake: Pour the pasta mixture into a greased 9x13 inch baking dish. Top with grated mozzarella and Parmesan cheese.

              Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Once baked, remove from the oven and let it cool for about 5 minutes. Garnish with fresh basil leaves, if desired, and serve warm.
