12 oz (340g) fusilli or penne pasta

2 ripe avocados, halved and pitted

2 tablespoons olive oil

2 cloves garlic, minced

1 pound (450g) chicken breast, diced

Salt and pepper, to taste

1 teaspoon paprika

1 cup cherry tomatoes, halved

½ cup fresh basil leaves

Juice of 1 lime

½ cup grated Parmesan cheese (plus extra for serving)

¼ cup heavy cream (optional, for extra creaminess)

Crushed red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and reserve 1 cup of pasta water.

    Prepare the Avocado Sauce: In a food processor, combine the ripe avocados, olive oil, minced garlic, lime juice, Parmesan cheese, and a pinch of salt and pepper. Blend until smooth and creamy. If you desire a silkier texture, add the heavy cream and blend again. Adjust seasoning if necessary and set aside.

      Cook the Chicken: In a large skillet over medium heat, add a little olive oil. Add the diced chicken breast, season with salt, pepper, and paprika. Sauté until the chicken is cooked through and golden brown, about 6-8 minutes. Stir occasionally to ensure even cooking.

        Combine Everything: Reduce the heat to low. Add the cooked pasta to the skillet with the chicken. Pour over the creamy avocado sauce and toss well to combine, adding reserved pasta water a little at a time until you achieve your desired sauce consistency.
