Creamy Chicken Pasta with Corn and Bacon

8 oz (225 g) fettuccine pasta

1 lb (450 g) boneless, skinless chicken breasts, diced

4 slices of bacon, chopped

1 cup (150 g) sweet corn (fresh or canned)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup (240 ml) heavy cream

1 cup (100 g) grated Parmesan cheese

1 cup (240 ml) chicken broth

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Boil the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the drippings in the skillet.

      Sauté Chicken: In the same skillet, add olive oil, if necessary, and the diced chicken. Season with salt, pepper, and Italian seasoning. Sauté until the chicken is browned and cooked through, about 8-10 minutes. Remove the chicken from the skillet and set aside with the bacon.

        Build the Sauce: In the same skillet, add chopped onion and garlic. Sauté until the onions are translucent, about 3-4 minutes. Pour in the chicken broth, scraping the bottom of the skillet to deglaze. Allow it to simmer for 2-3 minutes.

          Creamy Mixture: Reduce heat to low and slowly stir in the heavy cream. Bring it to a gentle simmer and add the grated Parmesan cheese, stirring until melted and combined. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

            Combine Ingredients: Add the cooked fettuccine, chicken, corn, and crispy bacon back into the skillet. Toss everything together gently to combine and heat through. Adjust seasoning with more salt and pepper if needed.
