Creamy Corn and Avocado Chowder

1 red bell pepper, diced

2 medium potatoes, peeled and diced

4 cups vegetable or chicken broth

1 cup coconut milk (or heavy cream for a richer flavor)

1 ripe avocado, diced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro or parsley for garnish

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, and red bell pepper. Sauté for about 5 minutes until the onions become translucent.

    Add Potatoes and Spices: Stir in the diced potatoes, ground cumin, and smoked paprika. Cook for an additional 2-3 minutes, allowing the spices to bloom.

      Cook the Corn: Add the fresh corn kernels and pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce to a simmer. Cook uncovered for about 15-20 minutes, or until the potatoes are tender.

        Blend for Creaminess: Using an immersion blender, partially blend the chowder in the pot, leaving some chunks for texture. If you don’t have an immersion blender, transfer half of the chowder to a countertop blender and blend until smooth, then return it to the pot.

          Stir in Coconut Milk: Pour in the coconut milk, stirring well. Allow the chowder to simmer for another 5 minutes to heat through.

            Add Avocado and Season: Gently fold in the diced avocado. Season with salt, pepper, and lime juice to taste. Let the chowder simmer for another minute.
