2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium zucchinis, diced

4 cups fresh or frozen corn kernels

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer flavor)

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil or parsley for garnish

Optional: 1 tablespoon lemon juice for brightness

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 5 minutes.

    Cook the Zucchini: Add the diced zucchini to the pot and continue to sauté for another 5-7 minutes until the zucchini is tender.
