Ingredients

1 large cucumber, finely grated

1 cup plain Greek yogurt

2 cloves garlic, minced

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

1 tablespoon olive oil

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

Optional: a pinch of cayenne pepper for a kick

Instructions

Prepare the Cucumber: Start by grating the cucumber using a box grater or a food processor. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out any excess moisture. This step is crucial to prevent the dip from becoming watery.

Mix Yogurt Base: In a medium mixing bowl, add the plain Greek yogurt. Use a whisk or a spatula to smooth it out and make it creamy.

Add Flavorings: Incorporate the minced garlic, chopped dill, lemon juice, olive oil, salt, black pepper, and optional cayenne pepper into the yogurt. Mix well until all ingredients are evenly combined.

Combine Cucumber and Yogurt: Fold the prepared, drained cucumber into the yogurt mixture until fully integrated. Taste the dip and adjust seasoning if necessary.

Chill and Serve: Transfer the dip to a serving bowl. For best flavor, allow it to chill in the refrigerator for at least 30 minutes before serving. This will let the flavors meld beautifully.

Garnish (Optional): Just before serving, garnish the dip with a sprig of fresh dill or a few slices of cucumber for an appealing presentation.

Enjoy: Serve the Creamy Cucumber Yogurt Dip with pita chips, fresh vegetables, or as a zesty sauce for grilled meats.
