Creamy Dill Pickle Pasta Salad

Ingredients
  

2 cups rotini pasta

1 cup dill pickles, finely chopped

1/2 cup red onion, finely diced

1/2 cup celery, diced

1/2 cup mayonnaise

1/2 cup sour cream

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Optional: 1 cup cherry tomatoes, halved

Optional: 1/2 cup shredded cheddar cheese

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain the pasta and rinse it under cold water to cool it down quickly. Set aside.

    Prepare the Dressing: In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, and chopped dill. Whisk together until smooth and well combined.

      Mix the Salad: Add the cooled pasta to the dressing mixture. Then, gently fold in the chopped dill pickles, red onion, and celery. If you’re using cherry tomatoes and cheddar cheese, add them now as well.

        Season: Taste the salad and season with salt and pepper to your liking. Remember that the dill pickles can add some saltiness, so adjust accordingly.

          Chill: Cover the pasta salad and refrigerate for at least 1 hour before serving. This will allow the flavors to meld together beautifully.

            Serve: Give the salad a good stir before serving. Garnish with extra fresh dill if desired.
