3 cups fresh sweet corn kernels (about 6 ears of corn)

1 medium onion, diced

2 cloves garlic, minced

1 medium zucchini, diced

1 large red bell pepper, diced

2 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer flavor)

1 tablespoon olive oil

1 tablespoon fresh lemon juice

Salt and pepper to taste

Fresh basil leaves, for garnish

Optional: Crumbled feta cheese, for serving

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add Corn and Zucchini: Incorporate the diced zucchini and fresh corn kernels into the pot. Sauté for 4-5 minutes, allowing the vegetables to soften and their flavors to blend.

      Pour in Broth: Add the vegetable broth to the pot, bringing the mixture to a gentle simmer. Allow to cook for about 10 minutes, letting the zucchini become tender and the corn flavors infuse.

        Blend the Soup: Remove the pot from heat. Use an immersion blender to puree the soup until smooth and creamy. (If you don’t have an immersion blender, carefully transfer the mixture in batches to a regular blender, blending until smooth, and return it to the pot.)

          Add Creaminess: Stir in the coconut milk (or heavy cream) and fresh lemon juice. Return to a low heat just to warm through. Season with salt and pepper to taste.

            Serve: Ladle the soup into bowls. If desired, top with fresh basil leaves and a sprinkle of crumbled feta cheese for an added flavor burst.
