Creamy Garlic Chicken and Spinach Pasta

8 oz (about 225 g) fettuccine or pasta of your choice

2 tablespoons olive oil

1 lb (450 g) boneless, skinless chicken breasts, sliced into thin strips

Salt and pepper to taste

4 cloves garlic, minced

1 cup (240 ml) chicken broth

1 cup (240 ml) heavy cream

1 cup (about 100 g) fresh spinach, roughly chopped

½ cup (50 g) grated Parmesan cheese

1 teaspoon Italian seasoning (optional)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set the pasta aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the sliced chicken with salt and pepper. Add the chicken to the skillet and sauté for about 5-7 minutes, or until the chicken is cooked through and golden brown on the outside. Remove the chicken from the skillet and set aside.

      Make the Garlic Sauce: In the same skillet, lower the heat to medium, and add the minced garlic. Sauté for about 1-2 minutes, or until fragrant, taking care not to burn it.

        Combine the Broth and Cream: Pour in the chicken broth and bring to a simmer. Then, add the heavy cream and stir well. Let the sauce simmer for about 3-4 minutes until it begins to thicken.

          Add Spinach and Chicken: Stir in the chopped spinach and cooked chicken, cooking for an additional 2-3 minutes until the spinach is wilted. You can also add Italian seasoning at this point for added flavor.

            Mix in Pasta: Add the drained pasta to the skillet, tossing to combine with the creamy chicken and spinach sauce. If the sauce is too thick, gradually add some reserved pasta water until you achieve your desired consistency.

              Finish with Parmesan: Stir in the grated Parmesan cheese until melted and the sauce is creamy. Taste and adjust seasoning with more salt, pepper, or Parmesan if necessary.

                Serve: Plate the creamy garlic chicken and spinach pasta and garnish with freshly chopped parsley. Serve with lemon wedges on the side for a bright finish. Enjoy your delicious creation!
