2 lbs Yukon Gold potatoes, peeled and quartered

1 cup heavy cream

4 tablespoons unsalted butter

4 cloves garlic, minced

Salt, to taste

Freshly ground black pepper, to taste

2 tablespoons olive oil

1/4 cup sour cream (optional, for extra creaminess)

1/4 cup chopped fresh chives (for garnish)

Instructions
 

Boil the Potatoes: Place the quartered Yukon Gold potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook until the potatoes are fork-tender, about 15-20 minutes.

    Sauté the Garlic: While the potatoes are cooking, heat the olive oil in a small skillet over medium heat. Add the minced garlic and sauté until fragrant and golden, about 2-3 minutes. Be careful not to burn the garlic. Remove from heat and set aside.

      Drain and Mash Potatoes: Once the potatoes are done, drain the water and return them to the pot. Use a potato masher or a ricer to mash the potatoes until smooth and creamy.

        Combine Ingredients: Add the heavy cream, butter, sautéed garlic, and sour cream (if using) to the mashed potatoes. Stir until everything is well incorporated and creamy.

          Season: Taste and season with salt and freshly ground black pepper to your preference. Adjust the consistency with additional cream if needed.
