8 oz (225g) fettuccine or spaghetti

2 tablespoons olive oil

1 tablespoon butter

4 cloves garlic, minced

10 oz (300g) mushrooms, sliced (button or cremini)

1 teaspoon dried thyme (or fresh thyme, chopped)

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

½ cup heavy cream

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté Mushrooms: While the pasta is cooking, heat the olive oil and butter in a large skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until they are golden brown and have released their moisture.
