8 ounces fettuccine or spaghetti

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach, roughly chopped

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or spaghetti according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it brown.

      Make the Cream Sauce: Lower the heat and stir in the heavy cream. Allow it to simmer for 2-3 minutes. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy.

        Incorporate Spinach: Add the chopped spinach to the skillet, stirring until the spinach wilts, about 2-3 minutes. Season the sauce with salt, black pepper, and red pepper flakes, if using.

          Combine Pasta and Sauce: Introduce the cooked pasta to the garlic Parmesan sauce, tossing to coat evenly. If the sauce is too thick, gradually add some reserved pasta water until you reach the desired creaminess.
